Revenue Management is about optimizing revenue and reducing costs to maximize both turnover and profit. Time is a crucial factor in every restaurant and café operation from how long a guest stays at a table to when demand is at its highest or lowest. This course provides you with the tools to strategically manage and maximize the value of your available time. Whether you have extensive experience, are new to the industry, or want to deepen your understanding to take the next step in your career, this is the course for you. 

Course Content 
You will learn:

  • Optimization of Pricing and Capacity: Strategies to increase revenue per guest through dynamic pricing, segmentation, and occupancy analysis. 
  • Efficient Booking and Seating Management: How to manage reservations and seating to maximize revenue, minimize empty tables, and improve guest flow. 
  • Increasing Demand During Low-Traffic Hours: Methods to fill slow periods through smart promotions, special offers, and targeted marketing.
  • Strategic Upselling: How to create value and increase revenue per guest through effective product placement, package deals, and staff sales techniques.
  • Menu Engineering and Psychology: Tips on how to design a menu to guide choices, increase average spend, and maximize profitability through layout, descriptions, and dish placement. 
  • Digital and Printed Menus: Utilizing QR codes, digital ordering systems, and traditional menus to enhance efficiency and improve the guest experience.
  • Time Optimization in Service Flow: How to eliminate bottlenecks, streamline workflows, and improve table turnover without compromising guest satisfaction.
  • Data and Analytics for Better Decision-Making: How to use sales data and key performance indicators to make strategic decisions that improve profitability and operations.
  • RevPASH (Revenue per Available Seat Hour): How to calculate and apply RevPASH to measure and improve profitability per available seat per hour.

Each session concludes with a short assignment that summarizes the day's topics and must be submitted by 7:00 PM on the same day. 

After completing the diploma cours Revenue Management you will be able to optimize income and reduce costs to maximize both turnover and profit.

To receive a diploma, at least 80% attendance is required and that you have passed the examination, which in this course means approved home assignments.

Structure
The course is delivered remotely in real time and is carried out according to schedule. The training includes 30 clock hours (i.e. 40 study hours) divided into 9 meetings.

  • March 31 – April 2, 1:00 PM–4:20 PM
  • April 7–9, 1:00 PM–4:20 PM
  • April 14–16, 1:00 PM–4:20 PM

Prerequisites 
The course is designed for everyone in the industry, from restaurant owners and managers to head chefs, sous chefs, bar managers, maître d’s, café managers, baristas, and those planning to open their first restaurant or café. It also suits those looking to develop their skills and take on more responsibility.

Course Material
To participate, you will need a computer with a camera and a stable internet connection. Your own notes and PDF materials will form the basis of your studies. 

About the Instructor
Marcus Dahl is committed and works in a pedagogical way and always has a good group dynamic in the education. Marcus has extensive international experience in the restaurant industry, having worked in Sweden, the USA, Dubai, Spain, Switzerland, and Denmark. He is trained in Hotel Management at César Ritz Colleges in Switzerland and in Revenue Management at Cornell University in the USA. With over 20 years of experience, including responsibility for restaurants with profit margins over 20% achieved through strategic revenu management, he now shares his knowledge with other industry professionals. 

Registration
We reserve the right to cancel the education if there are too few participants and shorten it if there are fewer than six participants. We start at four participants and will be a maximum of 8 participants. Registration is binding!

Financing
The education is not eligible for student aid.
If you want to pay by invoice, choose Medborgarskolan invoice. If you want to pay in installments, write in the message box that you want to pay in installments. It is possible to split the invoice into up to two parts.
